Cold Sesame Noodles | Serves 4
If you like sesame noodles, I urge you to try this easy recipe. Use wheat noodles (udon is a great choice) or as I do, opt into gluten free (not because I want to, rather because I have to).
INGREDIENTS
1 lb. Rice linguine or spaghetti
water, for boiling noodles
1 teaspoon sesame oil, for boiling noodles
2 large carrots, julienned
4 scallions, thinly sliced
SAUCE
5 tablespoons sesame oil
1 tablespoon toasted sesame oil
1 tablespoon tamari soy sauce
2 tablespoons mirin
4 tablespoons tahini
water, for desired consistency
2 tablespoons black sesame seeds
salt, to taste
METHOD
- In a medium pot, bring water to boil on high. Add noodles and teaspoon of oil, turn heat to medium and cook until done (about 8-10 minutes). Strain and run under cold water. 
- Prep carrots and scallions and set aside in small bowl 
- In another small bowl, mix sauce ingredients thoroughly; add water to thin consistency 
- When noodles done, add to large bowl with vegetables, sauce, black sesame seeds and toss. May need to add a little salt to taste.
