Napa Cabbage Slaw | Serves 4-6

INGREDIENTS
6 cups Napa cabbage, trimmed and shredded
2 large carrots, julienned
DRESSING
1/4 cup extra virgin olive oil
1/4 cup brown rice vinegar
1 tablespoons Dijon mustard
3 tablespoons shallots, minced
1 tablespoon fresh thyme, minced
1/4 teaspoon salt
METHOD
- Trim top and bottom of cabbage (make sure to remove outer leaves). Thinly slice (shred). Place in large bowl. Add carrots and toss. 
- In glass measuring cup (or small bowl), combine dressing ingredients. 
- Toss dressing with vegetables.
