Gluten Free Chapati | 8 BREADS
I have been gluten free for 20 years. Yes, way before it was on trend! Living with illness forced me to look closely at what and how I ate starting in the 1980’s. I learned long ago that we are what we eat so I decided to take control of what I could. Admittedly, I miss bread thus I am always experimenting. This recipe is the convergence of many that I have tried over the years. It’s a little messy but well worth it!
INGREDIENTS
2 cups gluten free 1 to 1 flour mix, King Arthur or Bob's Red Mill 
1/2 teaspoon baking powder
1/4 teaspoon xanthan gum, in addition to that in GF mix
1/2 teaspoon kosher salt
1 cup cold water
2 tablespoons extra virgin olive oil
2 tablespoons additional gluten free flour, four rolling dough
METHOD
- Mix dry ingredients in a bowl. Slowly add cold water to form dough and knead until smooth. Add oil and knead to incorporate. Cover dough with clean cloth and let sit for 30 minutes. 
- Break dough into 8 portions and roll in hands to form large golf ball-sized pieces. Using a small handful of gluten free flour dust a flat surface and roll each piece with rolling pin. 
- Heat a large pan (make sure it’s dry) and place each chapati, one at a time, in the pan. Cook for 3 minutes per side.
